Held Tuesday, October 11, 2022, Tablescape Courses offered access to an immersive and exploratory meal that reached into the nature of Stephanie’s exhibition, They say it better than I ever will. Grace designed the menu around ingredients and foods Stephanie also uses in her own work. Guests received a small gift from Stephanie and helped support future artist programming at Companion.

AMUSE-BOUCHE
Chewy rice / blueberry chung / seaweed

INTRO
Assortment of summers’ end vegetables, preserved and fermented
Warm broth
Herbed bread

MAIN
Rabbit in carnitas confit with burnt onion, served on corn husks
Beet dyed red and purple potato
Marigold and lemon preserved carrot

CLOSING
Persimmon and squash preserves
Warmed olives
Seeded crackers

AFTER
Chicory coffee, brewed at table
Honeyed hot toddy with thyme, poured at table
